Origin
This wine originates solely from a 3ha block of bush vines
next to the cellar.
Vinification
Picked at 23,50 balling, the freshness of the wine was preserved.
The fragile Pinot Noir berries were gently handled and fermented
for thirteen days on the skins. The wine was then pressed
and laid down to rest in French Oak barrels for twenty-two
months. No racking occurred to limit oxidation. Finally the
wine was racked into a tank. No fining occurred and a very
coarse filtration was done, so not to damage the fruit.
Winemaker’s tasting notes
The nose is very typical of Pinot in this cooler 2004 vintage.
Look for upfront aromas of strawberries and raspberries, with
subtle hints of flowers and spice. On the palate the wine
is extremely fresh and fruity, along with a very fine grained
mid palate tannin, allowing it to compliment a variety of
food types ranging from carpaccio and salads, to most heavy
meat dishes.
