Origin
The total production of this wine comes solely from the bush
vines surrounding the cellar.
Viticulture
Meticulously manicured bush vines, yielding at 6 tons/hectare,
give the wine its depth and concentration. Enough sunlight
into the ripening zone ensure optimal ripeness is obtained.
Vinification
Harvested at a modest 240 balling, the grapes were crushed
and destemmed. Fermentation lasted sixteen days, pressing
occurred on day seventeen, with the wine ageing for twenty
months in French Oak barrels. A minimal filtration was done
before being bottled in January 2005.
Winemaker's tasting notes
The wine has a very delicate nose with wafts of perfume and
flowers coming through. A medium bodied palate follows with
round but firm tannins lingering on the back of the tongue.
Great with your meats and pasta, even try with a crab curry.
